摘要 <P>PROBLEM TO BE SOLVED: To obtain a mixed vegetable tempura having light palatability in spite of being thick and to provide an apparatus and a means for efficiently producing such a mixed vegetable tempura. <P>SOLUTION: The thick mixed vegetable tempura is one having a void in the thickness direction artificially formed during frying in oil. The mixed vegetable tempura has the void produced by a projection attached to a frying mold. The mixed vegetable tempura is preferably a frozen commodity. The frying mold in which a mixture of an ingredient material and a batter liquid is fried in oil is equipped with the projection for forming a void in the thickness direction in the mixed vegetable tempura. The frying mold preferably has through holes for passing frying oil during frying in oil. The frying mold is one for the thick mixed vegetable tempura. The method for frying in oil comprises using the frying mold. The method for producing the mixed vegetable tempura comprises mixing the ingredient material with the batter liquid, putting the mixture in the frying mold, firstly frying the mixture in oil, removing the fried food from the mold, sprinkling batter on the fried food and secondarily frying the mold in oil.
