<P>PROBLEM TO BE SOLVED: To provide a W/O emulsifier composition suitable for the emulsification of a high salt content system and the emulsification of a high water-content system; and to provide a W/O emulsion using the emulsifier composition. <P>SOLUTION: The W/O emulsifier composition contains a fatty acid ester of sucrose. The content of the total of the fatty acid esters of the sucrose, having 1 and 2 esterification degrees is ≤5 wt.%, the content of the total of the fatty acid esters of the sucrose having 3-5 esterification degrees is 30-60 wt.%, and the content of the total of the fatty acid esters of the sucrose having 6-8 esterification degrees is ≤70 wt.%. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
