PROBLEM TO BE SOLVED: To provide a method for sterilizing poultry meat enabling continuous and effective sterilization of poultry meat and excellent in economical efficiency. SOLUTION: This method for sterilizing poultry meat comprises subjecting poultry meat to contact treatment with a solution containing a metal complex of hinokitiol and/or its salt when treating poultry to produce the poultry meat.
