PROBLEM TO BE SOLVED: To provide a structure for an exhaust part of a deck oven usable for baking, humid baking or the like of a bread, a Western-style cake or the like especially in a multistage deck oven. SOLUTION: The structure of the exhaust part in the deck oven obtained by piling at least two furnace units has an exhaust duct defining an outside exhaust passage to the exterior, common to exhaust passages in the oven units from the interior of each of the oven units, and the exhaust duct has exhaust openings making each of the exhaustion passages in the oven units communicate with the outside exhaust passage, and formed therein, and guide plates acting so that the air exhausted from the exhaust passages in the oven units is diverted to the upper directions in the outside exhaust passages are installed in the vicinities of the exhaust openings at least at the upper layer. As a result, the exhaust from the lower layer unit is not blocked by the exhaust from the upper layer unit to enable the exhaust to be carried out well always, and the problem of backflow or the like into the interior of the oven is not caused.
