A polysaccharide obtained from the seed of a plant of the genus Hymenaea, which is useful as a thickening agent, gelling agent, suspension and emulsion stabilizer, etc., in the fields of foods, chemicals, medicines, etc., and is characterized in that: (1) it has a molecular weight of 5,000 to 2,000,000, (2) the constituent sugars thereof are arabinose, galactose, xylose and glucose, and (3) the main chain thereof comprises beta-1,4-glucan.
