MONONUCLEARLY FILLED MICROCAPSULES

Mononuclearly filled seamless microcapsules comprise a flavor-containing filling in a hardened shell based on an acidic polysaccharide with a water content of up to 50 wt.%. Independent claims are also included for: (1) a food composition comprising the microcapsules and a carrier; (2) production of the microcapsules by forming discrete droplets of the liquid filling in a solution or dispersion of the shell material so that the shell material surrounds the filling on all sides in the droplets, hardening the shell material and drying the capsule shells to a water content of up to 50 wt.%.
