PROBLEM TO BE SOLVED: To provide a method for judging so as to simply and accurately judge the amount of the content of unsaturated fatty acids in fats based on the genotype of cattle and to provide a method for more objectively judging the flavor, texture, etc., of beef based on the results of judgment. SOLUTION: As a result of studies made on the relationship of a stearoyl-CoA desaturase gene with the degree of unsaturation of cattle body fats by paying attention to the stearoyl-CoA desaturase gene, a plurality of (SNP) single nucleotide polymorphisms are found in the same gene. It is found that there is the relationship between the genotype of the gene classified by the single nucleotide polymorphisms and the degree of unsaturation of the cattle body fats, etc. The method for judging the amount of the content of the unsaturated fatty acids in body fats or milk fats of cattle based on the genotype of the stearoyl-CoA desaturase gene can be utilized for judging the flavor, texture, etc., of the beef and is industrially useful.
