PULLULANASE, METHOD FOR PRODUCING THE SAME AND USE THEREOF

PROBLEM TO BE SOLVED: To provide a pullulanase producing a pullulan having low viscosity, a small Mw/Mn ratio and good handleability and to establish a method for the production of the enzyme and its use.

SOLUTION: A new pullulanase, a method for the production of the enzyme by using a microorganism belonging to the genus Aureobacidium and capable of producing the enzyme, a method for the decomposition of pullulan with the enzyme and a method for producing a pullulan having lowered viscosity and/or Mw/Mn ratio (Mw is weight-average molecular weight and Mn is number-average molecular weight) by the use of the enzyme.
