PURPOSE: A method of preparing Lentinus edodes-fermented soybean paste by mixing aged fermented soybean paste, Lentinus edodes and a brine solution and then aging the mixture for 6 to 10 months is provided. The Lentinus edodes-fermented soybean paste has pharmacological effect of Lentinus edodes while maintaining characteristic taste and flavor of fermented soybean paste. CONSTITUTION: Fermented soybeans are aged with a brine solution for 40 to 60 days. Thereafter, 85 to 90% by weight of the fermented soybean paste which soy sauce is separated from is mixed with 8 to 12% by weight of Lentinus edodes and 5 to 2% by weight of a brine solution and the mixture is aged for 6 to 10 months. The Lentinus edodes is obtained by cutting into a predetermined form and then freezing. |
