<P>PROBLEM TO BE SOLVED: To provide air bubble-mixed food enabling homogeneously intermixing big air bubbles and small air bubbles and stably maintaining the bubbles. <P>SOLUTION: The mixed air bubble-containing food comprises air bubbles which are grown and stabilized by foaming oil and fat before crystallizing and partly defoaming through cooling and crystallizing the oil and fat, based on the knowledge that the oil and fat of liquid has weak defoaming effect, but the defoaming effect is rapidly improved by solidification. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
