PURPOSE: A method of making a coffee composition containing Hydrangea macrophylla leaves by mixing and grinding Hydrangea macrophylla leaves and coffee beans is provided. The composition is reduced in the bitter and astringent tastes of the coffee bean by Phyllodulcin of Hydrangea macrophylla leaves while spreading the aroma of Hydrangea macrophylla. CONSTITUTION: A mixed liquid of 20 to 30% by weight of ethyl alcohol and 70 to 80% by weight of distilled water is sprayed on Hydrangea macrophylla leaves and the Hydrangea macrophylla leaves are dried for 4 to 5 days under the sun. The dried Hydrangea macrophylla leaves are sprayed with distilled water, dried for 1 to 2 days under the sun and then ground. Then, 0.5 to 3.0% by weight of Hydrangea macrophylla leaf power is mixed with 99.5 to 97.0% by weight of coffee bean powder.
