<P>PROBLEM TO BE SOLVED: To provide a method for preserving a liquid or pasty yeast extract at a low common salt concentration. <P>SOLUTION: This method for preserving the liquid or pasty yeast extract having the common salt concentration of <5 wt.% and obtained from an autolysate or an enzyme decomposition product of yeast comprises bringing solid concentration to ≥50 wt.% and moisture activity value to ≤0.90. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
