<P>PROBLEM TO BE SOLVED: To provide and a method and an apparatus for cooking cereal, mainly in enzymatic industry and food brewing industry. <P>SOLUTION: The method for cooking cereal comprises bringing steam fed as fine foam in water into contact with water to generate saturated steam, giving saturated steam from which large-sized water drops are removed after rising from a water phase to a vapor phase, jetting saturated steam having nearly equal amount to each area to the bottom direction of a steam chamber when the bottom of the steam chamber is nearly evenly divided into a plurality of areas and bringing the raising saturated steam into contact with the upper surface of the steam chamber in equal density. In the apparatus for cooking cereal, a steam-blowing unit having a plurality of jetting holes or jetting slits is provided under the interior of a steam-reforming apparatus and a filter for removing large-sized water drops is provided above the interior of the steam-reforming apparatus and a steam nozzle is provided in the steam chamber of a cooking apparatus body so as to jet saturated steam in nearly equal amount to each area when the bottom of the steam chamber is evenly divided into a plurality of areas and steam jetting holes are provided in the lower part of the steam nozzle so as to jet the saturated steam to the bottom direction of the steam chamber. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
