<P>PROBLEM TO BE SOLVED: To provide fermented instant noodle utilizing lactobacillus comprising grain-utilized food or alkaline food such as instant noodles, to which finely acid taste and flavor are imparted without spoiling flavor and palate feeling inherent in noodles; to provide a method for producing the noodles and a method for improving the flavor of the noodles. <P>SOLUTION: The fermented instant noodles comprising instant noodle-like grain-utilized food or alkaline food is produced by utilizing fermentation with lactobacillus. The method for producing flavor-improved instant noodles comprises a process of preparing noodle dough in the presence of the lactobacillus.
