PROBLEM TO BE SOLVED: To properly heat and cook various foods by adjusting the environment where the foods are placed with respect to a food heating and cooling method for quickly heating and cooking the various foods at the optimum temperature while keeping high quality. SOLUTION: The food 19 is placed in a heating chamber 13, the temperature and humidity in the heating chamber 13 are changed by controlling a steam generator 15 in accordance with the progress of the heating of the food 19, the environment of the heating chamber is adjusted to be fitted to the environment around the food in completing the heating of the food 19, and further the microwave applied to the food 19 is controlled, whereby the food is quickly heated and cooked in a state that its heat and water content are not taken by the surrounding environment.
