PROBLEM TO BE SOLVED: To provide a non-destructive inspection method of flesh quality, which can maintain and foster stock species with good quality in thremmatology and contributes to imaging diagnoses for managing health of stocks, by evaluating the flesh quality of the stock alive, which is not slaughtered. SOLUTION: In the method, the stock whose flesh quality is measured, is moved into a magnetic field, and a probe is installed on or set near the stock, and imaging and measuring NMR spectra are carried out for test sections in a stationary state, and then imaging information being measured and spectral analyses are carried out, and images and spectral data are displayed on a monitor, and the flesh quality is determined by a determining means working with above analyzing means.
