<P>PROBLEM TO BE SOLVED: To provide an acidic gel-like food which can well form a gel without precipitating aggregates, even when prepared under an acidic condition, and has excellent storability and flavor, and to provide a method for producing the same. <P>SOLUTION: This acidic gel-like food is characterized by comprising an insoluble protein obtained by thermally denaturing a protein and gel-like state gellant gum and being adjusted into an acidic state. The pH value of the acidic gel-like food is preferably 2.5 to 4.0. The method for producing the acidic gel-like food is characterized by comprising a protein-insolubilizing process for thermally denaturing the protein of raw material to form the insoluble protein, a pH-adjusting process for mixing the insoluble protein with the gellant gum and adjusting the mixture into an acidic state, and a gelling process for gelling the pH-adjusted mixture. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
