<P>PROBLEM TO BE SOLVED: To provide a method for producing a plain meat product, capable of processing the plain meat product to be tough, without using a phosphate salt, or with a reduced amount of the phosphate added to the product, and to provide a quality improving preparation. <P>SOLUTION: In this method, meat in a lump is treated with an aqueous solution which contains calcium hydroxide and/or calcium oxide, and trisodium citrate and/or tripotassium citrate, and, if necessary, transglutaminase. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
