Production of O-acyl glucose derivatives comprises reacting a carboxylic acid with an alkyl haloformate and reacting the resulting mixed anhydride with glucose. Production of O-acyl glucose derivatives, especially 6-O-acyl derivatives of formula (I), comprises reacting a carboxylic acid of formula RCOOH with an alkyl haloformate of formula X-CO-CHR1>R2> and reacting the resulting mixed anhydride of formula (II) with glucose: [Image] R : 7-21C (un)saturated linear or branched hydrocarbyl; R1>, R2>1-20C (un)saturated linear or branched hydrocarbyl; X : halo, preferably Cl or Br.
