PURPOSE: An assorted kimchi sauce using a processed product of cacao(Theobroma cacao L.) or curry is provided. The sauce has reduced salinity, acid flavor and pungency and keeps taste consistency of kimchi as well as enhanced distribution period thereof. CONSTITUTION: The assorted kimchi sauce contains 0.1 to 50% by weight of a processed product of cacao or curry and additionally 0.1 to 15% by weight of one or more components selected from the group consisting of: peanuts, nuts, beans and cereals. The sauce also contains 0.01 to 30 parts by weight of green tea extract, 0.01 to 30 parts by weight of herb extract and 0.1 to 30 parts by weight of tangerine extract as a calcium preservative. In the manufacture of the assorted kimchi sauce, the material is heated at 80 to 100deg.C. |
