<P>PROBLEM TO BE SOLVED: To provide a pH adjuster aqueous solution for noodle boiling liquid having satisfactory acidity and well-balanced pH buffer ability and improving stability at the time of preservation. <P>SOLUTION: The pH adjuster aqueous solution contains lactate, phosphoric acid and/or phytic acid, and an organic acid salt. As a result, the acidity is satisfactorily high and quantity to be used for boiling liquid is small, thus there is no fear of destroying flavor of boiled noodle products. Furthermore, the aqueous solution has excellent yield of product and working efficiency because of being excellent in pH buffer ability to smaller pH rising value of the boiling liquid, and also has extremely excellent stability because of depositing no crystal for a long period even at a low temperature. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
