摘要 <P>PROBLEM TO BE SOLVED: To provide a method capable of suppressing increase in coloration and darkening of color tone which occur during storage of alcoholic beverage and seasonings. <P>SOLUTION: The alcoholic beverage or the seasoning is produced by bringing a filtered solution of unrefined Sake (rice wine), which is a clear fluid obtained by filtering unrefined Sake after aging into contact with a strongly basic anion exchanger. A strongly anion exchanger in which a pair ion is a chlorine ion is preferably used as the strongly basic anion exchanger. As a result, coloring by heat sterilization can be suppressed and increase in coloration and darkening of color tone during storage of the alcoholic beverage and the seasoning can remarkably be suppressed. <P>COPYRIGHT: (C)2004,JPO&NCIPI
