PURPOSE: A method of making tofu by mixing soy milk with loach powder after separating the soy milk from soy dregs is provided. The tofu contains higher quality protein and richer nutrients than compared to conventional tofu. CONSTITUTION: During the manufacture of tofu, 75% by weight of black bean is mixed with 25% by weight of loach powder before the soy milk is coagulated. Then, the mixture of soy milk and loach powder is added with a coagulant, allowed to settle and then compressed. The tofu is cut into a predetermined size. |
