PRODUCTION OF DOUGHNUT LIKE DUMPLING COVERED WITH SESAME SEEDS USING POWDERY RAW MATERIAL CONTAINING UNGELATINIZED STARCH, PREGELATINIZED STARCH, WHEAT FLOUR AND SUGARS AND PRODUCTION OF DOUGH USED FOR PRODUCTION OF DOUGHNUT BY ADDING WATER AND SEASONING COMPONENT TO POWDERY RAW MATERIAL

摘要

PURPOSE: A method of making doughnut like a dumpling covered with sesame seeds using a powdery raw material containing ungelatinized starch, pregelatinized starch, wheat flour and sugars is provided. Also, provided is dough used for the preparation of the doughnut. The doughnut has excellent storage stability and sticky and resilient feeling like a rice cake. CONSTITUTION: The doughnut is prepared by using a powdery raw material comprising 50 to 80 parts by weight of ungelatinized starch, 6 to 25 parts by weight of pregelatinized starch, 7 to 30 parts by weight of wheat flour and 7 to 25 parts by weight of sugars. Dough used for the preparation of the doughnut is made by adding water and, if necessary, a seasoning component to the powdery raw material, dividing the obtained dough into small pieces and forming each small piece into a desired shape and, if necessary, stuffing the dough with fillings. The doughnut can be prepared by frying the dough.
