PROBLEM TO BE SOLVED: To provide a method and a system for deboning meat having such a mechanism as to be compatible with both left and right meat blocks to be deboned in a hung state in a back-split and cut-in-half condition, discriminate either one of the left and right blocks, perform a left/right changeover of a relevant changeover station in response to the discriminarion result to provide a left and right random deboning lines, and ensure an efficient deboning treatment to be carried out through the proper use of the left and right random deboning lines. SOLUTION: The deboning system comprises a pretreatment section 10 for streaking a work and a work charge section 11 by the help of an automatic loader, a left/right discriminative section 12 by the help of a sensor, a left/right changeover operative section 13, the left/right changeover station 15, a tact feed section 16, and a removed bone discharge section 17.
