<P>PROBLEM TO BE SOLVED: To provide a method for producing a ginkgo nut extract in the form of paste or powder with raw ginkgo remained unheated and intact in order to solve the problem that conventionally, ginkgo nuts are incompatible with other food materials because 34.7% of the carbohydrates contained therein are pregelatinized as a heat treatment is carried out in a skinning step, and also in order to prevent both characteristics of the efficacy of ginkgo nuts as a crude drug, i.e. as meal mixed with Chinese medicine, and flavor as a food material from being lost. <P>SOLUTION: The method for producing the raw ginkgo nut extract comprises subjecting raw ginkgo nuts freed of astringent skin to ozone cleaning/degerming treatment and alkaline water reducing treatment and making the resultant ginkgo nuts into paste or powder of the same remained unheated and intact. Thereby, the extract can be added to various foods, affording nutrition/tonifying effects peculiar to ginkgo nuts without loss, and thus exhibiting marked effects in improving dietary life. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
