摘要

PROBLEM TO BE SOLVED: To provide a gel-like food having excellent freeze resistance and heat resistance, to provide a liquid food of which the viscosity is increased, and to provide a thickening/gelling agent composition for the food, used for the same.

SOLUTION: This thickening/gelling agent composition for the food contains ι-carrageenan and/or xanthan gum and fenugreek gum.
