PROBLEM TO BE SOLVED: To provide bread comprisingβglucan in which theβglucan having excellent biological regulating functions in an amount required to exhibit functionality is formulated without causing volume reduction, lowering of taste/texture, and the like. SOLUTION: The bread comprising theβglucan formulated therein is obtained by formulating theβglucan therein and the amount of water W to be formulated is pts.wt. represented by the formula (1) W=X(A+B)+YB (wherein, X denotes a numerical value of 0.5-1.0; and Y denotes a numerical value of 1-6) when the amount of wheat flour is A pts.wt. and the amount of theβglucan is B pts.wt.
