<P>PROBLEM TO BE SOLVED: To provide easily water-soluble inclusion flavonoids dissolvable in a concentration of ≥0.1% in a food such as a transparent beverage; and to provide a method for producing the inclusion flavonoids. <P>SOLUTION: The method for producing the easily water-soluble inclusion flavonoids comprises dissolving flavonoids included in a cyclodextrin in an alkali solution at pH 9-12, and drying the dissolved product, or dissolving the flavonoids included in the cyclodextrin in an alkali solution at pH 9-12, regulating the pH of the solution so as to be 2-8 and concentrating or drying the pH-regulated product. The flavonoids are preferably an isoflavone derivative. A commercial product and an inclusion isoflavone derivative produced by a well-known method can be used as the isoflavone derivative included in the cyclodextrin. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
