<P>PROBLEM TO BE SOLVED: To provide a method for the industrial production of a large quantity of L-glucose at a low cost, an enzymatic reaction liquid containing L-glucose and an enzymatic agent containing D-arabinose isomerase. <P>SOLUTION: L-glucose is produced from L-fructose, optionally L-fructose converted from L-psicose or L-sorbitol, by treating the L-fructose with an enzyme, preferably immobilized enzyme to convert the fructose to L-glucose. D-arabinose-isomerase is used as the enzyme and a solution containing L-fructose is used as the L-fructose. The obtained reaction solution is fractionated by a column chromatography using a strongly acidic cation exchange resin to obtain a fraction having high L-glucose content. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
