This invention relates to the procedure for elaborating of a product denominated smoked-type bacon pork sausage coming from any part of the pig with the exception of the belly, by means of the technique depicted herein. The object of the present is the elaboration of a smoked bacon-type sausage different to the ones currently in the market, due to a novel procedure which utilizes any part of the pig with the exception of the belly, as well as the press mold to obtain the desired similarity, with the advantage of having a lower cost, with the proper characteristics of the commonly known bacon.
