PROBLEM TO BE SOLVED: To provide a spray type vacuum freeze-drying device capable of getting out impalpable powder of a chemical substance or a microcapsule of the chemical substance at low cost with high productivity by spraying and freezing a liquid solution of the chemical substance or a microcapsule dispersion of the chemical substance, and sublimating and drying a solvent or a dispersion medium. SOLUTION: Dropping micro-frozen substances F formed by spraying a condensate R of coffee components from a nozzle 12 in an upper end part of a vacuum freeze-drying column 11 are received and collected with a collecting board 13 with a horizontal posture rotatably provided in the column at an intermediate height. The micro-frozen substances F on the collecting board are dried as moisture sublimes under vacuum, and powder coffee D remains after drying. The collecting board is rotated around a rotary shaft 13s provided on both end parts to be postured upright, and the powder coffee D is dropped and temporarily stored on the bottom of the vacuum freeze-drying column 11.
