<P>PROBLEM TO BE SOLVED: To provide a method for producing boiled noodles having no quality deterioration by sterilization, excellent in palate feeling and preservable for a long period. <P>SOLUTION: This method for producing the boiled noodles for long preservation comprises a process of obtaining boiled noodles by boiling dry noodles under pressure in acid aqueous solution at 105°C-200°C. The method in a performed form further comprises a process of filling the boiled noodles in a sterilized container under a germ-free condition and a process of sealing the container under a germ-free condition. The boiled noodles have 50-80 wt.% of water at the time of being boiled up. A sterilization degree obtained in the process of obtaining the boiled noodles is >Fo0 and ≤Fo5, and the boiled noodles have pH3.0-5.5. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
