Collagen is solubilized by treatment with proteolytic enzymes at an acid pH, e.g. in the range pH 1.5 to 3.0, the proteolytic enzymes used being produced by moulds of Penicillium spinulosum, Penicillium frequentans and Penicillium citreoviride (see Specification 1,119,343).
