MODULATION OF PROTEINS BY PHENOLIC COMPOUDNS

Phenolic compounds from fruits and vegetables are disclosed which have beneficial effects against variety of diseases states, such as Alzheimer's disease and other neurodegenerative disorders. Using proteomics technology, a number of proteins isolated from rat and mice brain have been identified and shown to undergo changes in expression and/or modification in response to treatment with phenolic compounds. The majority of the proteins identified herein were previously identified as differentially expressed or modified in AD brain. The protein changes described that were altered in response to GSE or soy protein treatment were altered in a different direction to the changes described in AD brain.
