PROBLEM TO BE SOLVED: To provide a method for profitably producing an S-substituted cysteine derivative and/or an S-substituted homocysteine derivative. SOLUTION: This fermentation method for culturing a microorganism in a fermentation culture medium comprises adding a mercapto group-having organic compound to the culture medium, subjecting the mixture to a culture to accumulate the S-substituted cysteine derivative and/or the S-substituted homocysteine derivative corresponding to the added mercapto group-having organic compound in large amounts in the fermentation product and the fermentation solution, and then collecting the products.
