摘要 <p><P>PROBLEM TO BE SOLVED: To provide a seasoned pickled Ume (Japanese plum) enabling a calcium component required per day to be replenished/ supplemented by only eating the seasoned pickled Ume by enhancing the calcium content into a degree enabling the statement as a healthy functional food (a nutritious functional food) to be made without reducing taste as the seasoned pickled Ume. <P>SOLUTION: The seasoned pickled Ume is obtained by soaking a Ume dried without seasoning which is a raw material, in a seasoning liquid. The method involves a step for adding fermented calcium lactate to the seasoning before soaking the Ume dried without the seasoning so that the content of the fermented calcium lactate may be 3.5 wt.%. <P>COPYRIGHT: (C)2004,JPO&NCIPI</p>
