In a multiple-effect evaporator wherein the highest-pressure stage 1 is heated 'by steam from a boiler, and each succeeding stage is heated by vapour supplied through line 23 from the preceding stage, the feed liquid stream 10, e.g. sea water, passes through a condenser 6 wherein the vapours 21 from the lowest-pressure stage are condensed, and the feed stream then divides into three portions: One portion 11 flows through heat-exchanger 8 wherein it is heated by condensate 18' from the heater of stage 1, the heated portion being then mixed with unevaporated liquid 16 flowing to intermediate stages 2, 3; the second portion 12 flows through heat-exchanger 7 where it is heated by condensate 20 from stage 5 and is then mixed with unevaporated liquid 18 flowing to low-pressure stages 4, 5; and the third portion 13 of the feed flows through heat-exchangers 9, disposed in the vapour spaces of the stages, and is then introduced through line 14 into stage 1. The condensate withdrawn from condenser 6 and heat-exchanger 7 is withdrawn from the system through line 19. The condensate withdrawn from heat-exchanger 8 is returned to the boiler. Unevaporated liquid from stage 5 is discharged from the 'system through line 22. The condensate formed in stages 2, 3 and 4 is passed through lines 24 to the succeeding stage.
