PURPOSE: A method of making Konjak grains having a moisture content of 6 to 15% by treating a Konjak paste made from the starch of devil's tongue with calcium hydroxide solutions and sugars is provided. It reduces problems of distribution and preservation of Konjak products by treatment for the prevention of degeneration. CONSTITUTION: A Konjak paste and 2% by weight of calcium hydroxide solutions are introduced into an extrusion apparatus, extruded and then cut to produce Konjak grains. After coagulating the Konjak grains in a dissolution tank containing 0.2% by weight of calcium hydroxide, it is heated with 0.02 to 0.1% by weight of citric acid solutions, soaked in sugar liquid containing 20 to 30% by weight of starch sugar, glucose or the like and then dried fro 5 to 15hr at 30 to 40deg.C after hydrating. |
