<P>PROBLEM TO BE SOLVED: To provide a food material derived from a mushroom belonging to the genus Lyophyllum, easily chewed and swallowed even by aged persons who have reduced physiological functions such as manducation, swallowing while leaving characteristic taste of the mushroom. <P>SOLUTION: The hot water extract obtained by hot water extraction of the Lyophyllum mushroom fruit body without subjecting to a defatting treatment, forms gel with ≥1x10<SP>3</SP>Pa of rupture stress by left-standing 24 hours at 4°C. The hot water extract of the Lyophylum mushroom fruit body is obtained by eliminating fractions of ≤10,000 molecular weight from the hot water extract, and the dried product obtained by heating the hot water extract at a temperature ≤60°C exhibits following physico-chemical properties. The product is a white to yellowish white powder, comprising 40-70% of sugar contents, 1-20% of proteins and 10-40% of lipids, soluble in water, and 1% solution of the same forms gel with ≥1x10<SP>3</SP>Pa of rupture stress. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
