<P>PROBLEM TO BE SOLVED: To obtain a safe acrylamide production inhibitor using an edible plant-derived component, excellent in the effect of inhibiting acrylamide production in processed food products ( including deep-fried food products ) with slight adverse effects such as offensive taste and odor on the processed food products ( including the deep-fried food products ). <P>SOLUTION: This acrylamide production inhibitor comprises as the active ingredient luteolin as a component found in perilla as a labiate, which is obtained preferably by extraction from the perilla as the labiate with a lower alcohol and water. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
