PURPOSE: A method of processing goat milk by adding a specified amount of Codonopsis lanceolata containing volatile fatty acids having an effect of removing or compensating a goat milk flavor during the processing is provided. It permits effective removal of the taste and flavor of goat milk without the addition of equipment and processes and enhances nutrients and functional materials thereby improving productivity and a commercial value. CONSTITUTION: Goat milk is heat-treated at proper temperature and homogenized. Then, the homogenized goat milk is added with 0.2 to 6% by weight of raw Codonopsis lanceolata juice based on the weight of goat milk and cooled to 5deg.C. In the process, volatile fatty acids contained in the raw Codonopsis lanceolata juice remove and compensate a goat milk flavor.
