PURPOSE: A method of processing red pepper seeds by separating seed kernels possessing a hot, bitter and astringent taste from seed hulls possessing nutrients in large quantities is provided. It permits efficient utilization of red pepper seeds and production of clean red pepper products in high yields. CONSTITUTION: Red pepper seeds are processed by the following process consisting of: immersing red pepper seeds in water at 50deg.C for about 1 day or at 10 to 20deg.C for about 2 days; agitating and hulling emersed red pepper seeds; washing the hulled material and separating it into seed kernels and seed hulls; drying it after separation and then roasting and grinding seed kernels. |
