The invention relates to a food product of helical configuration, in particular as a sausage without a skin. It is helical, wherein the adjacent turns are preventing any reannealing during its manufacturing and its subsequent cooking. The invention also relates to a method and apparatus for making the food product by the extrusion of plastic food substrates. The production process is continuous, easy to be adjusted and controlled and is materialized by producing minimum wastes. The food product contains one or more plastic food substrates (A, B), formed into a helical configuration. It is coated with a fluid barrier agent to prevent any reannealing of adjacent turns and has the shape of a single or multiple spiral. The floor barrier agent comprises an edible vegetable oil. The food substrate is chosen from meat, cheese and is based on confectionery pastries. The substrate based on meat contains water-retaining agent, designed to be kept inside the product during its cooking. 21 claims, 6 figures
