Aroma extracts are prepared by (i) preparing a mixture containing at least the seeds of Trigonella foenum-graecum; (ii) subjecting the mixture to enzymatic hydrolysis; (iii) thermally treating the mixture to inactivate the enzyme; (iv) centrifuging the product to isolate the liquid phase containing the aroma components and (v) concentrating the liquid phase by evaporation.
