PROBLEM TO BE SOLVED: To provide a microorganism producing an organic solvent-resistant cyclodextrin synthetase by separating the microorganism from natural resource. SOLUTION: The microbial strain producing the cyclodextrin synthetase has the following properties. (1) The molecular weight (measured by SDS-PAGE) is about 70,000; (2) it converts starch into cyclodextrin and the main conversion product isβ-cyclodextrin; and (3) it is stable in the presence of any of methanol, ethanol, 2-propanol, benzene, toluene, p-xylene, cyclohexane and hexane and is free from remarkable lowering of the activity with the substances.
