<P>PROBLEM TO BE SOLVED: To provide an emulsifier composition free from creaming and oil floating over a long period, excellent in appearance and containing a citrus-based essential oil, etc., for beverage having high palatability. <P>SOLUTION: The emulsifier composition is obtained by carrying out micronizing treatment of emulsifying flavor containing an oil-soluble flavor containing the citrus-based essential oil, an emulsifier and water and/or a polyhydric alcohol by collision energy obtained by collision of emulsifying flavor. The micronizing treatment is carried out by pressurizing the emulsifying flavor at 50-250 Mpa pressure and oppositely making the emulsifying flavor collide with each other. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
