<p><P>PROBLEM TO BE SOLVED: To provide a method for liquefying smashed/cooked sweet potatoes or the like as a Shochu (white distilled liquor) raw material into liquid having fluidity capable of pumping. <P>SOLUTION: The Shochu raw material liquefied solution is prepared to be pumped, by acting≥0.2 unit/g raw material hemicellulase agent to the smashed sweet potatoes or the like as the Shochu raw material at approximately 30-50°C for 0.5-2 h, adding≥10 unit/g raw materialα-amylase agent, performing fermentation reaction with heating and warming up and, then, cooling. <P>COPYRIGHT: (C)2004,JPO&NCIPI</p> |
