摘要 PURPOSE: A method of making a garlic confectionery product by coating sliced garlic with a seasoning material containing fruit juice, starch, black pepper, mustards or the like and then frying in oil or baking in an oven is provided. The product is easy to eat and carry and can be used as a snack for children, a health supplementary food or a relish taken with wine. CONSTITUTION: Garlic is sliced in a longitudinal direction to a thickness of 2 to 4mm, dried to a moisture content of 3 to 10% and then soaked in a mixture of 48 to 36% by weight of water, 1 to 5% by weight of salt, 20 to 5% by weight of sugar, 15 to 3% by weight of butter, 0.4 to 0.6% by weight of baking powder, 15 to 50% by weight of soft wheat flour and 0.6 to 0.4% by weight of vanilla flavoring. Then, the sliced garlic is coated with a seasoning material, fried in oil at 140 to 160deg.C for 8 to 12min or baked in an oven. The seasoning material contains 45 to 60% by weight of fruit juice, 35 to 15% by weight of starch, 15 to 20% by weight of an egg, 0.5 to 2% by weight of black pepper, 1.5 to 0.5% by weigh of mustard, 1.5 to 1% by weight of coffee, 0.5 to 1% by weight of yeast and 1 to 0.5% by weight of vinegar.
