PROBLEM TO BE SOLVED: To produce bread by a sponge and dough method using wheat flour obtained from wheat produced in Japan according to a conventional method as a raw material. SOLUTION: The bread is produced by the sponge and dough method and uses a mixture prepared by including a fractionated material of gluten consisting essentially of gliadin in wheat flour produced in the country as the raw material. A fractionated material of the gluten consisting essentially of the gliadin or the fractionated material and gluten are contained in the sponge and dough. Furthermore, common salt and/or L-ascorbic acid and/or a yeast food and/or a dough improving agent are made to exist in the sponge and dough. Thereby, good dough having good mechanical resistance can be prepared even by using the wheat flour produced in the country and tasty bread having a soft texture with volume and slow staling can be produced as the product.
